13th July - Video seminar

Learning intentions

  • To understand the principles of home food preservation methods.

Total study time this week: 2 hours

This week we are looking at the Principles of Home Food Preservation. To understand this you will gain an insight into a selection of different preservation methods and how they work in order to extend the shelf life of a product. For example; tuna is added to brine which is a salt solution, therefore the amount of moisture that is present in the food is reduced.

  • To understand the three different types of microorganisms and how they are used to benefit food production.

This week we are continuing to look at food production and how microorganisms can be used to enhance food production. There are three different types of microorganisms, some which can spoil food and some which can help produce it, for example; yeast in bread manufacturing.

  • To understand how food can be contaminated and how it spoils.

Total study time: 2 hours

We are continuing our focus on elements of unit 2 of the course. For part of unit 2 you will create a 2 course meal based on a chosen brief. You will need to have a good understanding of food safety and hygiene, the focus for this weeks work is food contamination and spoilage.
